We came to this restaurant to celebrate a friend’s birthday and chose the tasting menu after clearly discussing our budget range per person with the server. Despite that, the final cost exceeded the range we had provided by a significant margin, with no meaningful communication or transparency along the way. The experience was made even worse by the food itself. Nearly every dish was excessively salty, which overwhelmed the flavors and made the tasting menu difficult to enjoy. At over $200 per person, I expect far better execution, attention to detail, and quality control. What was most disappointing, however, was the staff’s response to our feedback. When we politely mentioned that several dishes were overly salty, the waiter dismissed our concerns outright, insisting that the tasting menu was “supposed to be like this” and implying that we simply did not understand fine dining or culinary artistry. That level of arrogance is unacceptable, especially when customers are providing honest feedback. A special occasion dinner should feel memorable for the right reasons. Instead, this experience felt overpriced, poorly executed, and handled with a surprising lack of professionalism. I would strongly discourage anyone from choosing this restaurant for a celebration or other important event.
My girlfriend and I visited Published just this past week and want to extend our sincere appreciation for how warmly we were welcomed at the restaurant and for how the chef and the service team went above and beyond to make our experience unforgettable. We've been in BC on vacation for a couple of weeks, and this dinner was absolutely the highlight of our trip. Our server informed us that the chef was looking forward to our visit as we'd mentioned in our booking that we'd never been to a Michelin-star restaurant before. We ordered a couple of amuse-bouches and were instead surprised with six different pairs so we could experience them all. Could not have imagined a better way to start our meal. We chose a number of different dishes and were treated to a few more surprises throughout the service. This was really our first time enjoying wine pairings with dishes of this calibre and I can confidently say now, "We get it." Absolutely perfect. We just couldn't stop smiling throughout the entire evening. We researched several restaurants in Vancouver before choosing Published. This was a big deal for us because it's something we don't have the opportunity to experience at home. It really felt like everyone at the restaurant understood the excitement we were feeling and it was reflected back at us all night. Thank you so much to the team at Published for making our first time there (and our first time at a Michelin-star restaurant) so unforgettable. We will be back.
This was our third time dining at Published on Main since they were awarded a Michelin star. While our previous two experiences were pleasant, this visit felt noticeably disappointing and, unfortunately, not reflective of Michelin-star standards. The service was lackluster. We waited approximately twenty minutes past our reservation time, and throughout the meal our table was never wiped, nor were our small plates or cutlery refreshed. While these may seem like minor details, they are the types of touches that typically distinguish restaurants of this calibre. The food itself felt imbalanced. The salad dressing was overpoweringly acidic and sour, overwhelming the dish rather than complementing it. The pork ribs were coated in a very rich sauce, but the plate lacked contrast or elements to balance that richness. When we politely shared our feedback with a staff member, the response felt dismissive, with little acknowledgment or engagement. Overall, this experience was disappointing. Given our previous positive visits, we hope this was simply an off night. However, consistency is key at this level, and we left feeling that this meal did not live up to the expectations that come with a Michelin star.
We had a wonderful fall tasting menu dining experience at Published. Each dish was beautifully prepared and uniquely delicious, you could tell that a lot of work and attention was put into each dish. The service was excellent - Tristan, Joe and the rest of the team were all very professional, attentive and efficient. The pacing was just right as there were many dishes and gave us some time to digest between each dish. Some favourites were the Poached Oyster Smoked garlic with preserved tomato, Spotted Prawn Nasturtium BC Citrus Kosho, Foie Gras Root Beer, Toasted Hay Dungeness Crab, BC Matsutake mushroom in the aromatic yuzu dashi broth was exceptional, and most favourite dessert was the Black Sunchoke Dilly Bar. The main dish of BC pork was well prepared and delicious and exceeded expectation (since I’m very picky on pork dishes). We walked out well-fed and happy with the food and the service.
Food was amazing, service was great, drink was awesome There are 2 reason im not giving 5. 1) service was great , fast and on point They would clean the table fast , always available come and check on you all the time which is amazing many thanks, one thing we noticed when you are still finishing the last bite they come and ask to remove that dish , i felt bad that either we cant finish and they have to take the dish or we have to let go while we are chatting and eating . 2) We booked this place 2 months ago and we were so sure we want to try this place , we booked for 8 and 2 couples their kids got sick so badly! We called to reschedule not to cancel because it was an emergency situation not just not showing up they said no and our deposit of $280 is non refundable! We understand the cancellation policy but this was also emergency so i think for a kinda mid fancy restaurant and per person you would pay about $130 a different level of customer service is expected. Aside from that food service , presentation was amazing 5/5
