Dinner at Under Grain was truly a memorable experience! The vibe of the restaurant under the hotel creates an exclusive but not stuffy environment. It was lovely starting with a taste of Malta’s local sparkling wine, the sommelier was friendly and helpful with our selection throughout the dinner. We tasted the seasonal chefs menu and each dish was more creative and delicious than the last and I especially appreciated the special touches for my birthday. I highly recommend dining here for any trip to Valletta!

Superb! Huge, huge fan of this place. I believe it's actually punching above its one-star weight, and certainly at the price point it's at. The menu is innovative without being too avant-garde for friends and family who aren't "foodies." Wines were thoughtful and complimentary without being overboard or eye-rollingly pretentious; in short, my view is that there's something for everyone and you can choose your own adventure without needing too much coaching. The staff were helpful but not obtrusive. Everything I had I actually loved, and went a tad out of my comfort zone to try the pig ears - highly recommend!

Thank you, Chef Victor Borg, and the entire team. It was our 25th wedding anniversary last evening but you should not wait for a special occasion - book now! The presentation was lovingly designed with each treat bursting with texture, complexity, and most of all...outstanding flavours! The 'snacks' were each a "party for our taste buds!" What a treat! I was public relations manager for THE most amazing privately owned steakhouse in Memphis, Tennessee in a past life, however, the steaks we enjoyed last night were supreme, perfectly balanced with a creamy, bold Bernaise and the jus - simply sublime. The ambience was dark, peaceful, warm and inviting, while the staff were kind, patient, and did not hover. Well done! What can I say? Welcomed by the big man Chef Victor himself (busy in the kitchen). Atmosphere is beautiful, service super attentive and nice and food amazing. To be honest I've been to another 4 Michelin star restaurants 2 local and 2 abroad, this is definitely the best one. The service was extremely attentive, simple things, even how they present, decant and serve the wine absolutely amazing. Food all was over the top, only the petit fours were not out of this world but the rest of the food was absolutely amazing. With regards to reviews of people complaining about the time in between courses, I can truly say only between one course I thought It dragged a little long, but having said that restaurant was full and amazing food takes time to make Finally, regarding Chef Victor he was very warm to us and to finish it off they also have us a small chocolate and a signed menu as a parting gift. Well done to everyone who works there, experience was one of a kind

What a stunning evening. As a solo traveler to your fascinating country, my dining experience was exceptional in courtesy, warmth, and hospitality. Each person greeted me with a beaming smile and gracious welcome. The atmosphere was elegant and inviting - a tricky balance but achieved with perfection. Each course was beautifully presented and described eloquently. I was especially taken with the “picnic”! What fun! What great fortune to have chosen the Rosselli as my hotel in Valletta with such an extraordinary restaurant. This made it easy to indulge in the spectacular meal and get home safely. I cannot wait to return to Malta and dine with you again. Thank you for a splendid evening. Please extend my warmest thanks to each person who graced me with their excellence that evening. And compliments to the chef and the kitchen staff for their culinary artistry
