Restaurant Hubert is one of the best restaurants I’ve tried in Sydney. What sets it apart is that it delivers on every aspect of the dining experience—not just the food, but also the service, atmosphere, and overall execution. This is what I consider a proper restaurant. The ambience is fantastic. The venue is beautifully decorated with a classic French brasserie feel, complemented by live jazz music that creates an elegant yet lively atmosphere. It’s the kind of place where you can enjoy a great meal, have a few drinks, and simply soak in the vibe. The bar is also very well stocked, making it an excellent spot to see and be seen. As for the food, Restaurant Hubert isn’t trying to reinvent French cuisine or present avant-garde creations. The focus here is refined, highly skilled cooking, and that’s exactly how I judged it. The dishes may be traditional, but they are executed with exceptional technique. While many diners seemed to be ordering the various steaks, we opted for the Chicken Fricassee and did not regret it for a second. The chicken was cooked beautifully—moist, juicy, and tender throughout, including the breast meat, which is no easy feat. We also thoroughly enjoyed the Pommes Anna and the Cheese Soufflé, both of which showcased the kitchen’s attention to detail and technical skill. If you’re looking for inventive or experimental cuisine, this may not be the place. But if you appreciate classic French cooking executed at a very high level, Restaurant Hubert is absolutely worth a visit. Almost full marks from me. No regrets.
What can I say about Restaurant Hubert, besides it is an absolutely amazing restaurant that I cannot fault in the slightest. From the moment you step through the solid wooden door, decend the curved staircase surrounded by miniatures, and are greeted by the maître d', you are transported to an underground dining paradise where your senses and taste buds will have experiences never before had. The menu is modest in the number of options, but every single item is cooked and presented to perfection. And the wine list...dear lord, the wine list! Thank goodness they have sommeliers to guide you through it and make excellent suggestions. Added to all this, the atmosphere of Restaurant Hubert is amazing, especially when the live jazz is playing. I can't recommend Restaurant Hubert enough! I do recommend making a booking well ahead of time, as it gets booked out quickly. But once you visit, you will understand why it's so busy! 10 / 10 (5 stars just don't do justice)
Somewhere else has probably done it better — that basically sums up the experience at Hubert. Every dish felt like a weaker version of something you’ve had before. The dinner started on a low with the roe boat. No real creativity here — just uni, caviar, and roe thrown together with little thought behind it. At $21 for a tiny bite, it felt lazy more than luxurious. The beef tartare was average. The beef was diced too finely, losing that natural bouncy, slightly chewy texture tartare should have. A slightly larger cube would’ve given it more life. The tiny shoestring fries added nothing except crunch for the sake of crunch. Overall, bland and forgettable. The pate en croute also lacked depth. The wasabi-mustard sauce helped lift it slightly, but not enough to save the dish from feeling flat. Same story with the souffle, quite uninspiring. Duck parfait was decent. Smooth texture, no graininess, with a bright sweetness that worked well. But serving it with cold, hard sourdough completely threw the balance off. The bread felt stale and disconnected from the dish. Mains took almost 30 minutes to arrive after the entrées were cleared. The wagyu flank was unevenly seasoned, parts were oversalted, and pairing it with an equally salty kimchi gratin just amplified the issue. The only real standout of the night was the Murray cod. Nicely cooked, fresh, and properly seasoned. The sauce tied everything together well — rich and creamy, but with enough acidity to stop it becoming heavy. Overall, a disappointing food experience wrapped in a very nice setting.
Restaurant Hubert is the true definition of fine dining and easily one of the most memorable dining experiences I’ve had. Booking is definitely essential, and once you step inside, you’ll understand why. Every dish we tried was exceptional—from the escargot and beef tartare to the lobster and the passionfruit soufflé. Each plate was beautifully executed, full of flavour, and clearly crafted with great attention to detail. What really elevated the experience was the wine pairing. The staff were incredibly knowledgeable and helped match each dish with the perfect wine—their recommendations were absolutely spot on and enhanced every course. Service throughout the night was polished, attentive, and professional without feeling overbearing. There was also a live jazz band when we visited, which added an incredible атмосфере to the whole dining experience and made the night feel even more special. Even the toilet was surprisingly impressive—clearly no detail has been overlooked here. Overall, an outstanding experience from start to finish. Restaurant Hubert truly delivers on all fronts, and I’ll definitely be coming back.
We had a truly wonderful evening at Restaurant Hubert. From the moment we walked in, the atmosphere set the tone—classic, intimate, and beautifully elevated, with a live jazz band that added a timeless charm to the entire dining experience. We ordered the oysters natural, escargots, prime beef tartare, sirloin, and pommes anna, finishing with the Hojicha Paris Brest and a birthday cake. Each dish was thoughtfully prepared and rich in flavour—the prime beef tartare and Pommes Anna were particular highlights, and the hojicha cake was a refined and memorable finish. The service was polished yet warm, striking that perfect balance of attentiveness without being intrusive. Altogether, it felt like a true escape into a more elegant era. A stunning spot for a special night out—we’ll absolutely be returning.
