We celebrated a birthday at Metiz with the tasting menu — already booked by my partner before we arrived, which made the evening feel considered before it even began. The food was thoughtful and comforting, clearly made with intention. Our standouts were the Ensaladang Gulay, Peanut Squash with Kasuy Nilupak, Salinas, Lapu Lapu, Fried Rice, and the Fermented Puto with Coco Jam — Filipino comfort reframed without losing what makes it feel like home. Service, though, was where the night lost some of its warmth. The front of house made the most effort to engage, but questions weren’t always fully answered. Several other staff members barely acknowledged guests — no greetings, minimal interaction, just watching from a distance. In a room with only about six diners, that distance becomes hard to miss. What made it more noticeable is that the setting had everything it needed to feel intimate — and the opportunity was right there. A hello. A quick check-in. A moment of light conversation. Even the executive and head chefs were present that evening, and yet that presence never quite reached the table. In a restaurant this size, on a night this quiet, that’s a missed chance for something memorable. At this kind of dining experience, the room should feel like being welcomed into someone’s space, not just seated in it. The concept is meaningful, and the kitchen is doing something real. With hospitality that matches what’s already on the plate, this could be something worth returning to. Still very grateful for the opportunity to have dined at Metiz. Wishing the team well.
Metiz is by far my favorite restaurant in Manila. A truly standout experience in the local dining scene. In my opinion, they absolutely deserve their Michelin star ,even more than some fine dining restaurants I’ve experienced elsewhere. Precise cooking, a strong identity, and beautifully handled ingredients… every dish tells a story. Huge respect to the team for this level of excellence and creativity ! If you’re visiting Manila, this place is a must.

Food: What a fantastic approach to Filipino cuisine. Proud our culinary establishments are growing. Service: Excellent. Cheers to Arlo, RJ, the lady Maitre’d and the whole team. Ambience: Excellent Will come back: Definitely. Commentary: We were the table where the AC water started dripping, so we had to move tables two times. Got some drinks as compensation. But I do have to say, I think better have some industrial AC instead of the household split type ACs. I think the latter couldn’t keep up with the kitchen heat.
Can I say this is my favorite tasting menu in Manila? I came here twice this year and apparently I witnessed different fish served on the main dish. Still good but I loved the tuna they served on their first few weeks reopening.
