One of the best fine dining experiences I’ve ever had - could not recommend this more highly. Everyone needs to come and experience the food as an art form from the brilliant mind of chef Diego Guerrero. The food is playful, immersive, and delicious. Service was impeccable and the right balance of timing, charm, and attention. The chef also personally came out for some of the courses and chatted with us which I thought was such a nice touch. Go make a reservation now - I promise you, you won’t regret it.
DSTAgE – Sustainability and pure product focus at Two-Star Level With two Michelin stars and an additional Green Star for sustainability, DSTAgE is one of Madrid’s most compelling fine dining destinations. Rarely have we experienced such an uncompromising focus on product quality in a restaurant. The menu engages all senses, highlighting ingredients in their purest form while presenting them with remarkable creativity. The zero-waste philosophy is embraced wholeheartedly, with often-overlooked ingredients transformed into refined dishes that surprise and delight. This ethos is best exemplified in the main course: a simple slice of perfectly cooked steak, elevated to star level by flawless execution and respect for the product itself. The ambience is fresh and modern, perfectly reflecting the restaurant’s overall concept. The open kitchen, the absence of tablecloths, and the raw brick walls create an atmosphere that is both contemporary and authentic – an environment that matches the unpretentious yet highly sophisticated style of cooking. A special highlight lies in the use of advanced culinary techniques: fermentation, enzymatic processes, maturation, and distillation often added unexpected layers of flavor and depth, giving many dishes a distinctive wow-effect and a sense of discovery. Every dish we tasted was both delicious and memorable. The service matched the culinary standard – knowledgeable, attentive, and eager to share insights into the ingredients and techniques used. The result was not only an outstanding meal but also an educational journey into flavors, craftsmanship, and sustainability. Conclusion: DSTAgE is far more than just a restaurant – it is a true experience and, as the Michelin Guide states, absolutely “worth a detour.”
We had a spectacular dining experience at dStage. Every course was incredible and the wine pairing was perfect. The staff took incredible care of us. A highlight was the beef tongue, which was divine.
DSTAgE was a hit and miss experience. Some of the dishes were amazing such as the veal, broken eggs, shrimp with soup while some at least in my opinion were not worthy of a 2 michelin star restaurant such as the first three dishes and the "pizza". The service was amazing but one thing that I didnt like was that usually the meals in michelin restaurants are very precisely described whereas here the description was very very general and i guess its part of the idea of the restaurant because a menu is also not provided during or after dinner which i am not sure is a great idea. Anyhow it was a wonderful evening but I do feel something was simply missing.
Terrible experience. The worst nightmare. I went there with my fiance and ordered 22-course menu. We added wine pairing to anticipate for the upmost experience. Firstly, most food had strong taste and we could barely eat half way, and the taste only got stronger while some dishes made of fish and fermented smelled and tasted fishy. Secondly, the service was really unacceptable . A waiter accidentally knocked down a cup of white wine onto my fiancé, splitting the wine and broken glass all over onto my fiancé’s body. He got all wet and shirt soaked in wine, and there were still more than half of the courses not served yet. The waiters only said sorry once and immediately left, leaving both of us sitting there in shock. We both have no napkins and not dare to move with all the broken glass pieces on our feet and the floor. After a while, another waiter came back with two towels for us cleaning by ourselves, which were useless given that my fiancé’s shirt was fully wet. He only apologised once more, without any compensation or further following up. The main chef greeted every table and chatted with them for a long time, except our table. He did not even greet us or said goodbye when we left. We have never experienced such terrible services even in normal restaurants, not to mention this is a two stars Michelin. Totally disappointed and highly not recommend anyone to come, unless you would like to try such unique experiences.
