During our recent trip through Vietnam, one dining experience that completely exceeded expectations was T.U.N.G dining. Securing a booking here felt like a win in itself, but from the moment we arrived it was clear why Chef Hoang Tung and his team have built such a reputation in Hanoi’s fine dining scene. T.U.N.G’s philosophy centres around seasonal Vietnamese produce and modern techniques, with each dish designed to showcase local ingredients in a completely unexpected way. Across roughly 18 courses, the menu felt less like dinner and more like a carefully curated culinary journey. Thankfully each course was only a few bites because by the end we were absolutely full. The service was flawless without ever feeling stiff or overdone. Plates, cutlery and wine glasses seemed to appear and disappear unnoticed, almost like sleight of hand. The wine pairing was equally impressive, with staff topping up glasses in small pours to keep each wine at the ideal tasting temperature throughout the meal. Every course had a story behind it, highlighting regional Vietnamese flavours in creative and refined ways. Some standout dishes for me were the Ha Long peanut worm pho, which was unlike anything I’ve tasted before, the beautifully rich Satsuma A5+ beef, and the combination of Moc Chau strawberry with veal that somehow balanced sweetness, acidity and savoury depth perfectly. Dessert finished the experience on a high with an incredible lychee and tofu creation that was delicate, refreshing and beautifully plated. What impressed me most was how T.U.N.G manages to feel both deeply Vietnamese and incredibly contemporary at the same time. The entire experience showcased not just technical skill, but a real respect for local ingredients and culture. It’s easily one of the most memorable meals I’ve had and if I ever return to Hanoi, this would be at the very top of my list to revisit.

What an amazing experience. We were running so late and they were extremely accommodating. When we got there, we were able to meet the chef and watch the sous chefs prepared the dishes. The entire experience was so memorable. The meal was an absolute love letter to Vietnam. I highly recommend the wine pairing. After we were done, we were able to chat some more with the owner. I expressed how much I loved the cinnamon and he had a GENEROUS amount delivered to our hotel the next day to take home. I’ve never had such an amazing experience.

from start to finish, the experience was magical. Each dish was a masterpiece, inspired by a local ingredient. It was one of the best dining experience in our life and we highly recommend visiting TUNG Dining. It will leave you a lasting impression and we will certainly be back!

The reservation experience was honestly the worst part — unresponsive and frustrating, and far from what you’d expect from a restaurant at this level. That said, everything after stepping inside was outstanding. The atmosphere is beautiful and refined, the staff are genuinely kind and attentive, and the food is exceptional. Each dish comes with a clear story: thoughtful sourcing of ingredients, bold yet precise combinations, and moments of real surprise. Sweet potato topped with caviar? 😳 Unusual, but it worked brilliantly. Once you’re seated, the experience is truly memorable. I just hope the reservation process catches up with the quality of what happens at the table.

WOW!! - This is not only the best food I’ve eaten in a long time but also the best experience we have had in Vietnam all together. The story telling and the service are the best we have experienced. I feel like five stars is not enough, and the marketing team deserves a pay rise. What an inclusive, stunning experience. We are so pleased we got a table, be sure to book this incredible place.
